紅醬肉丸義麵 Spaghetti with Meatballs

材料 Ingredients
洋蔥丁 Diced onion2 杯 cup
大蒜 Garlic1 大匙 Tbs
絞牛肉 Ground beef 1/2 磅 lb (225g)
絞豬肉 Ground pork 1/2 磅 lb (225g)
絞小牛肉 Ground veal 1/2 磅 lb (225g)
碎扁葉巴西利Minced flat-leave parseley1/4 杯 cup
特大蛋 Jumbo egg 1 個 ea
麵包粉 Bread crumb2/3 杯 cup
帕梅善起司粉 Grated Parmigiano cheese 2/3 杯 cup
水 Water1/2 杯 cup
特級初炸橄欖油 Extra virgin olive oil 2+2 大匙 Tbs
鹽 Salt1/2+2/3 小匙 tsp
黑胡椒 Ground black pepper1/4+1/4 小匙 tsp
碎紅辣椒 Red pepper flake 1/4 小匙 tsp
義大利麵 Spaghetti1磅 lb (450g)
紅醬 Tomato Sauce/Marinara Sauce 4 杯 cup

做法:
1.鍋燒熱,加入2大匙橄欖油,洋蔥,1/2小匙鹽和1/4小匙黑胡椒用中火炒到洋蔥變透明。續加入大蒜和碎紅辣椒炒2分鐘。熄火等洋蔥變涼。
2.將三種絞肉,麵包粉,帕梅善起司粉,巴西里扁葉,蛋,1/3小匙鹽,1/4小匙黑胡椒放進大盆裡拌勻。續加入洋蔥拌勻。最後加入1/2杯水再次拌勻。用手指攪拌,不要過度攪拌。
3.烤箱預熱到350°F(175˚C)。另燒滾煮麵水。
4.取一小團肉放進鍋裡煎熟,試吃後再調整調味料的份量。
5.拿起一團絞肉,由虎口擠出小丸,再用兩手搓圓。共可做24個肉丸。
6.煎鍋燒熱加入兩大匙橄欖油。放進肉丸將兩面煎黃。
7.將肉丸移到鋪有烘培紙的烤盤上,放進烤箱烤15分鐘。
8.紅醬在鍋裡煮滾後用小火煨著。加入烤好的肉丸再繼續煨15分鐘。
9.煮麵水內加入足夠的鹽。依照包裝指示煮義大利麵。
10.將煮好的麵裝盤,上淋肉丸紅醬。最後撒上帕梅善起司粉和碎巴西里葉。



PROCEDURE
1.Add 2 tbs of olive oil, onion, ½ tsp of salt and ¼ tsp of black pepper to a heated pan. Sauté until the onion is translucent. Add the garlic and red pepper flake and continue to sauté for two minutes. Turn off the heat and let the onion cools down.
2.Place the ground meat, bread crumbs, Parmigiano cheese, parsley, egg, 1/3 tbs of salt and ¼ tsp of black pepper in a big bowl. Squish the mixture with your hands.. Add the onion and squish again. Finally add the water and squish until well combined. Do not over-mix.
3.Preheat the oven to 350°F(175˚C). Boil a 2/3 full pot of water for noodles.
4. Pan-fry a lump of meat in a pan. Taste the meat and adjust the seasonings as desired.
5. Place some ground meat mixture on your left palm. Loosely close your palm and form a circular opening with your index finger and thumb. Push the meat mixture through the opening and form a small ball. Roll the meatball between your palms to form a smooth ball. The mixture can make 24 meatballs.
6.Add 2 tbs of olive oil in a heated pan. Pan fry the meatballs until both sides are golden brown.
7.Transfer the meatballs to a baking pan that was covered with a piece of parchment paper. Bake for 15 minutes.
8.Bring the red sauce in a pot to a boil, then let it simmer. Add the baked meatballs and continue to simmer for 15 minutes.
9.Add enough salt to the water for noodles. Follow the package instructions to cook the spaghetti.
10.Plate the cooked noodles. Ladle the meatballs and sauce over the noodles. Sprinkle with grated Parmigiano and minced parsley leaves.
